We spent the last day of October taking advantage of the perfectly crisp air on a picnic in our neighborhood park. I packed our basket with some delicious fall inspired chicken salad, a loaf of french bread, spiked hot apple cider & sliced gala apples with caramel dip. We brought back this amazing wool tartan (Dark Maple) blanket from our honeymoon in Scotland a year ago, so it was an extra special way to finish our anniversary month.
As I had hoped, my recipe for Caramel Apple Cocktails was delicious heated up in a sauce pan. I was extra generous with the apple cider portion to make it more appropriate for an early afternoon picnic.
Fall chicken salad:
- 1 can of minced chicken
- Half a crisp gala apple
- 2 tbs of diced red onions
- 2 tbs of crushed walnuts
- 1ish tbs of olive oil mayo & sea salt and crushed pepper to taste
